Breakfast - Fruit smoothie of 1 1/2 bananas, a apple, @ a cup of pineapple and about 1 cup of soy milk. Was very creamy and almost like a shake.
Lunch - Was just a protein smoothie drink - Think chocolate flavor...Was good
Dinner - was delicious - we love lettuce wraps and made a Quinoa and Black Bean Lettuce wrap. It had Bok Choy, red and yellow peppers, Black Beans, onion and red and regular Quinoa all topped with avocado and a peanut sauce we pulled together. so yummy and we were full very quickly.
Today we bought huge amount of fresh food to eat over transition period and to be ready for juicing once juicer shows up...hope tomorrow..
Let me see if I can recall what we got:
- huge bag of organic carrots
- Baby Bok choy - they were so cute
- Gala Apples - 12
- Blackberries - 2 quarts
- Red and Yellow Peppers - 3 each
- Bibb lettuce for Wraps - 2
- Honey dew
- bag of Pears
- Celery - 2 lbs
- Ginger Root
- Avocado
- mini cucumbers
- Spinach - Huge Bag
- Lemons - a bad of 12
- Lime
- Strawberries - quart
I think a few other things were there also. It was 2 huge boxes of fresh food. Think it was about 85 bucks or so. Mostly from Costco. I know this isn't my ideal of local agriculture, but that will come as season changes from winter. We are doing what we can to get on track and make better choices. The social consciousnesses stuff will fall into place as we get better about it all. we have researched a lot of local resources and are very excited once growing season begins. We will be very blessed with what is close by.
Will probably grab a piece of fruit before bed and call it a successful 2nd day.
